Phase II-III pasteurization process has two important purposes;
Pasteurization
is required to kill any harmful organisms or other pests that may be present in
the button mushroom compost that has just completed the Phase I fermentation
process, and the ammonia formed during Phase I composting must be removed.
Because the high rate of ammonia prevents the growth of the fungal mycelium.
The
most important factor affecting the quality of button mushroom compost in the
pasteurization process is environmental hygiene. Phase II-III tunnels allow the
compost to be cleaned from harmful micro-organisms, to be protected from
external factors and to start the pasteurization process.
The
outside air entering the tunnel is filtered with 99% sensitivity and protected
from external factors, thanks to the specially developed exhaust system and
sports filter. A specially designed centrifugal type fan is used for tunnel
pastorization ventilation.
The pasteurization process (phase II-III process) is continued with automation control after the tunnel is filled. At the end of the pasteurization process, the button mushroom compost is ready for the mycelial planting stage and can be sent to the packaging line.
